Ingredients
1 scoop vanilla protein powder
¼ cup almond meal
flour
½ cup whole-wheat
pastry flour (or oat flour)
¼ cup xylitol (or
sweetener of choice)
1 whole egg
¼ cup low fat plain
cream cheese, softened
3 tablespoons
unsweetened almond milk (or milk of choice)
½ cup blueberries
Method
1. Preheat oven to 350 degrees F and line a mini loaf pan
with foil sprayed with non-stick spray.
2. Whisk together egg, cream cheese, and almond milk
in a mixing bowl until smooth.
3. Add the remainder of bread ingredients into bowl and stir
until well combined.
4. Spoon bread batter into loaf pan and bake in the oven for
34-38 minutes. Slice into 8 even pieces. Enjoy!

Is there anything one could use to replace the almond flour in this recipe?
ReplyDeleteIt will probably change the texture a bit since almond flour doesn't absorb as much liquid, but you can use additional whole wheat or oat flour - I would try only using 2 tablespoons of flour of choice in place of the 1/4 cup almond meal. Hope this helps :)

I actually use a gluten-free oat flour. If you can't find that, I recommend using almond meal flour and coconut flour at a 1:1 ratio to replace the oat flour cup for cup. Does this make sense??

ReplyDeleteit's about a 5 inch x 2 inch. Yes, you can use coconut sugar. I would go with 1/4 cup.
