Banana Coconut Popsicles


 Making popsicles is a way easier task than I anticipated! Blend, poor, and freeze! Easy, healthy, smooth, creamy, and delicious, these vegan protein popsicles are a refreshingly sweet summer treat that contain no added sugars.










Ingredients

4 large bananas
1 cup coconut cream
1 scoop vanilla brown rice protein powder
½ cup ice
½ teaspoon vanilla extract
¼ cup unsweetened shredded coconut

* What you will need:
8 standard popsicle molds
8 popsicle sticks
(I ordered a stainless steel set from amazon)

Method

1. Combine bananas, coconut cream, protein powder, and vanilla extract in a blender or food processor.

2. Blend mixture until smooth and creamy.

3. Coat the inside of popsicle molds with coconut oil.

*I used a kitchen pastry brush to coat the insides of the molds with coconut oil.

 4. Next, evenly sprinkle shredded coconut into each mold. Cover the mold with your hand and shake it slightly to disperse the coconut flakes.

5. Evenly pour popsicle batter into 8 popsicle molds. Place a wooded popsicle stick into the middle of each mold.

6. Place popsicles in the freezer for at least 6 hours.

* I ran the popsicle molds under warm water for a few seconds to help remove the popsicles.

7. Enjoy!
