Orange Creamsicle Truffles [Vegan and Grain-Free]


Imagine you as a kid, or an adult, enjoying the warm day outside with your favorite orange cream push-pop. Or maybe you are having a large bowl of sweet orange sherbet. These truffles are a delicious reminder of those classic treats. Smooth, tangy, sweet, and flavorful. They are also grain-free and vegan friendly!







Ingredients

2/3 cup cashew butter
1/3 cup maple syrup
½ cup coconut cream
2 tablespoons orange juice
1 teaspoon vanilla extract
1 cup coconut flour
2 scoops vegan vanilla protein powder
3 tablespoons orange zest
Optional: ½ cup melted while chocolate

Method

1. Line a sheet pan with parchment paper and set aside.

2. In a large microwave-safe bowl, melt cashew butter, maple syrup, and coconut cream for 30 seconds. Whisk mixture until smooth.

3. Whisk in orange juice and vanilla extract.

4. To the bowl, stir in coconut flour, protein powder, and orange zest until mixture is well combined.

5. Using your hands, roll about 2 tablespoons of batter into a ball. Set on sheet pan. Repeat this process until 24 truffles are made.

6. Place truffles in the fridge for at least 1 hour.

7. If desired, melt white chocolate and dip truffles in the melted chocolate. Let cool.

8. Best if enjoyed at room temperature.

* You can store the truffles in the fridge for up to 5 days or in the freezer for up to one month.
