Coconut Superfood Parfait {Vegan}

Enjoy this vegan-friendly coconut superfood parfait for breakfast and you'll get a boost of energy you need to start your day off right. Chockfull of nutrients from superfoods like chia seeds, pumpkin seeds, dried fruit, and oats, you'll feel good about every single bite you take. 







Ingredients

2 tablespoons coconut oil
¼ cup maple syrup
2 cups rolled oats
¼ cup pumpkin seeds
¼ cup dried fruit
1 scoop Vitacost Pea Protein Powder
1 teaspoon cinnamon
¼ teaspoon salt
1½ cups plain unsweetened coconut yogurt
1/3 cup coconut cream
¼ cup chia seeds

Method

1. Preheat oven to 325 degrees F. Line a baking sheet with parchment paper and set aside.

2. In a large bowl, heat the coconut oil and maple syrup in a microwave for 30 seconds. Stir until smooth. Heat an additional 15 seconds if the coconut oil isn’t melted yet.

3. Pour oats, pumpkin seeds, dried fruit, pea protein, cinnamon and salt into the bowl of wet ingredients. Stir until well combined.

4. Pour oat mixture onto sheet pan. Bake in the oven for 25 minutes, stirring the granola a couple of times during the baking step.

5. While the granola is baking, make the yogurt by whisking together coconut yogurt, coconut cream, and chia seeds.

6. Using 4 small serving cups, layer the yogurt and granola so that there are two layers of each in every cup. Top with additional coconut cream and fruit, if desired.

7. Let parfaits cool in the fridge for about an hour then enjoy!
