Stuffed Butterbeer Protein Cookies

 Let’s briefly sink our teeth into the wizarding world of Harry Potter, one stuffed butterbeer cookie at a time. Where did your imagination lead you as your read about the famous butterbeer drinks often consumed by Hogwarts students in the Harry Potter books? I thought of sweet butterscotch of some sort, with notes of vanilla, caramel, and butter. Sounds delicious to me! Hogwarts’ butterbeer was the main inspiration behind this recipe. And if you’re a fan, you’ll surely love these cookies, made with ghee clarified butter, brown sugar, and vanilla protein powder. All flavors that will make your butterbeer dreams come true!









Ingredients

½ cup ghee, at room temperature
½ cup brown sugar
1 egg
2 tablespoons unsweetened almond milk
1 scoop ARO vanilla whey protein powder
1 cup oat flour
1 cup almond meal flour
¼ teaspoon baking powder
5 dates, each cut into 4 small pieces (making 20 small pieces)

Method

1. Preheat oven to 350 degrees F. Line a sheet pan with parchment paper and set aside.

2. Add ghee & brown sugar to a large mixing bowl and, using a hand-held mixer, mix thoroughly.

3. Add egg to the mixing bowl and beat until mixture appears light and fluffy.

4. Stir in milk, protein powder, oat flour, almond flour, and baking powder until well combined.

5. Place cookie batter in the fridge for at least 30 minutes.

5.  Roll about 2 tablespoons of cookie dough into a ball and place ¼ of a date in cookie dough. Form dough around date then place cookie on the sheet pan. Press down lightly.

6. Repeat until 20 cookies are made.

7. Bake in the oven for 10-12 minutes. Let cookies cool on a wire rack then enjoy!
