If you’re a lover of raw cookie dough, this recipe is just for you! You will never know these chocolate chip cookie dough cups are sugar-free, gluten-free, & protein packed. Plus, they’re no-bake, making them easy and quick to whip up. I will warn you, speaking from experience, that it's very hard to eat just one. They are ADDICTING, much like any cookie dough.
Ingredients
1/3 cup oat flour
½ cup almond meal
flour
1/3 cup xylitol
1 scoop vanilla whey protein powder
¼ teaspoon salt
1 tablespoon melted
butter
½ teaspoon vanilla
extract
¼ cup cashew butter
¼ cup unsweetened almond
milk
¼ cup sugar free
chocolate chips
Method
1. In a mixing bowl, combine oat flour, almond meal flour,
xylitol, protein powder, and salt.
2. In a separate mixing bowl, whisk together butter,
extract, cashew butter, and almond milk. Pour this mixture into the bowl of dry
ingredients and stir together.
3. Stir in chocolate chips.
4. Place 18 silicone cupcake liners on a sheet pan. Fill
each cupcake liner ¾ full with cookie dough.
5. Place cookie dough cups in the fridge for at least 1
hour. Remove from fridge and serve.
* Cups can be stored in the fridge for up to 3 days or in
the freezer for up to 1 month.
