Mini Protein Lemonade Pies

 Refreshing, sweet, and tangy pies are perfect for the summertime, especially when they’re a quick, no-bake treat! All you need is about 15 minutes and you’ve got yourself a healthy little dessert packed with flavor and protein.






Ingredients

Crust
1/3 cup oat flour
¾ scoop Lean Body for Her vanilla whey protein powder
2 tablespoons coconut oil, melted
1 tablespoon water

Pie Filling
2 tablespoons coconut oil, melted
5 oz. plain cream cheese
1/3 cup lemon juice
Zest of 1 lemon
2 scoops Lean Body for Her whey protein powder
¼ cup xylitol
1 teaspoon vanilla extract

Method

1.  Place 8 silicone cupcake liners on a flat, freezer friendly dish and set aside.

2.  Combine crust ingredients together in a small bowl and mix until well combined and crumbly. Press about 1 tablespoon of crust into each silicone liner, flattening down with your fingers, until all liners are filled with crust.

3.  Add all of the pie filling ingredients to a blender or food processor. Mix until smooth.

4.  Evenly pour pie filling into each cupcake liner until each liner is about 2/3 full.

5.  Place pies in the freezer for at least two hours. When ready to serve, remove pies from freezer and liner. Let sit at room temperature for 5 minutes. Enjoy!
