Dark Cherry Coconut Cups {No Bake}


I think sometimes we need a little break from the oven heat in the summertime. No-bake treats have been my jam lately. They're refreshing, delicious, and require no additional heat! And has anyone else been on that cherry look-out? Gah they are soooooo good in the summer. I found a big ass bag at Costco. I mean I could probably eat the whole bag but we all know how that would turn out. So I set some aside for this *no bake* recipe. I went all out and created a double cherry treat for ya. A cherry filling AND a coconut cherry filling. How's that for cherry over-load? There's no such thing as a cherry over-load. Give me all the cherries!! I hope you all enjoy this treat as much as I do!







Ingredients

Cherry Filling
1 cup dark cherries, pitted 
2 tablespoons tart cherry juice from concentrate
1 tablespoon lemon juice
1 tablespoon maple syrup

Coconut Cherry Filling
¾ cup coconut cream
½ cup coconut butter, melted
¼ cup tart cherry juice from concentrate
1 scoop ARO vanilla whey protein powder
¼ cup xylitol


Method

1. Place all of the cherry filling ingredients in a small saucepan over medium high heat. Stir together and bring mixture to a simmer.

2. Let mixture simmer, stirring occasionally, for about 30 minutes, or until mixture has thickened.

3. Remove cherry filling from the heat and let cool.

4. While the cherry filling is cooling, place all of the coconut cherry filling ingredients in a food processor. Turn on and process, stopping to scrape the sides of the bowl a few times, until mixture is completely smooth.

5. Place 16 mini silicone cupcake liners on a sheet pan.

6. Spoon about 1 tablespoon of coconut cherry filling into each cupcake liner.

7. Next, spoon about ½ teaspoon of cherry filling into each cupcake liner, on top of the coconut cherry filling.

8. Lastly, spoon another 1 tablespoon of coconut cherry filling into each cupcake liner, on top of the cherry filling.

* This makes 3 layers in each cupcake liner (coconut cherry filling, then cherry filling, then more coconut cherry filling).

9. Sprinkle with coconut flakes, if desired, and place cups in the freezer for at least 3 hours.

10. Remove each cup from the liners and enjoy!

* These cups can be kept in the freezer for up to 1 month.

Makes 16 servings
1 serving is 1 cup without coconut flakes
