Blueberry Pie Protein Bars


 When you don’t want to be tempted with an entire pie or dedicate the time to making homemade pie crust, these little blueberry bars are the perfect treat! Tangy, sweet blueberries are placed on top of a smooth and creamy pie filling, giving these bars a uniquely delicious blueberry pie twist.








Ingredients

Crust
¾ cup brown rice flour
½ cup almond meal flour
¼ cup coconut oil, melted

Pie Filling
1/3 cup plain greek yogurt
2 tablespoons lemon juice
2 eggs
1 scoop ARO vanilla whey protein powder
1/3 cup xylitol

Blueberry Top
4 cups blueberries
¼ cup xylitol
1 scoop ARO vanilla whey protein powder

Method

1. Preheat oven to 350 degrees F.  Line an 8x8” baking pan with foil and set aside.

2. Combine crust ingredients in a small bowl and combine until mixture is crumbly.

3. Transfer crust mixture into prepared pan. Using your fingers, press mixture down until a smooth and even crust is formed.

4. For the filling, whisk greek yogurt, lemon juice and eggs in a mixing bowl until well combined.

5. Add in remainder of filling ingredients and whisk until smooth and creamy.  Pour filling mixture on top of crust and evenly distribute, using a spatula or back of a spoon.

6. In another bowl, gently toss together the blueberry top ingredients. Spoon blueberry mixture on top of filling.

7. Bake in the oven for 50-55 minutes or until dish is gently bubbling.

8. Remove from oven and let bars cool for 1 hour. Cut into 16 squares then enjoy!

Makes 16 servings
1 serving is 1 blueberry square
