A bite-sized treat that’s
sweet, crunchy, and packed with warm, diced apples. If you’re a fan of apple
crisps, then these bites were made just for you! Top each crispy apple cinnamon
bite with a spoonful of vanilla ice cream for the perfect fall dessert.
Ingredients
Apple Filling
1 cup apples, chopped
3 tablespoons water
1 tablespoon lemon
juice
1 tablespoon coconut
sugar
½ teaspoon ground
cinnamon
¼ teaspoon ground
nutmeg
Crispy Shell
¼ cup brown rice
flour
¼ cup ARO vanilla
whey protein powder
¼ cup gluten-free
rolled oats
¼ cup coconut sugar
¼ cup walnuts,
crushed
¼ teaspoon ground
cinnamon
¼ cup coconut oil,
melted
3 tablespoons water
Method
1. Preheat oven to 350 degrees F. Place 12 mini silicone
cupcake liners on a sheet pan and set aside.
2. Place apple filling ingredients in a small saucepan on
the stovetop over medium high heat. Bring mixture to a bowl, then reduce the
heat and simmer for 8-10 minutes, stirring occasionally. When apples are
tender, remove from the stovetop and set aside.
3. Combine the first 6 crispy shell ingredients in a mixing
bowl. Mix well.
4. Pour the coconut oil and water into mixing bowl, and
gently stir until mixture turns crumbly.
5. Place about 2 tablespoons of crispy shell mixture into
each cupcake liner, pressing the mixture into the bottom and sides of liners.
*You will have some mixture left over to top each bite with.
6. Evenly spoon apple filling into each cupcake liner.
Sprinkle with remaining crispy shell mixture.
7. Bake in the oven for 14-18 minutes, or until golden
brown. Let cool then remove each bite from the liners. Enjoy!
