Superfood Chocolate Fudge Cups

 Once you take a bite into these creamy, rich, gluten-free fudge cups & taste the perfect combination of flavors, you’ll soon see that it’s really difficult to eat only one! Packed with superfoods like honey, dried berries, cocoa powder, and pumpkin seeds, these are the perfect pre or post-workout treat to feed your body.







Ingredients

½ cup coconut oil, melted
1 cup coconut cream (use the solid portion of canned coconut)
3 scoops Lean Body for Her chocolate whey concentrate
½ cup unsweetened cocoa powder
½ cup honey
½ cup dried fruit of choice (I use dried cherries, blueberries, goji berries, cranberries)
¼ cup pumpkin seeds

Method

1. Combine the first 5 ingredients in a food processor.

2. Turn processor on and blend for 2-3 minutes, or until mixture is completely smooth.

3. Stir in dried fruit.

4. Place 16 mini round silicone molds on a sheet pan or flat serving dish. Evenly spoon fudge mixture into each mold.

*You can also use a mini muffin tin – just liberally coat it with non-stick spray.

5. Evenly top each cup with pumpkin seeds. Place in the freezer for at least 4 hours.

6. Remove cups from the molds and enjoy!
