Mini Cookies and Cream Protein Muffins

I love these mini muffins. The texture of these remind me of little brownie bites. Little Oreo brownie bites. Who doesn't want to try that?!?!  Maybe next time, I will crumble up some oreos in the batter before I bake them :) I am not sure if you're aware -- but Quest Nutrition actually has a NEW cookies and cream protein powder. DELICIOUS! There aren't many cookies and cream protein powders and if you're a fan of that flavor, you should really try it. Enjoy!


3 egg whites
¼ cup unsweetened chocolate almond milk
3 tablespoons all-natural cashew butter (or almond butter)
1½ scoops Quest Nutrition Cookies n Cream protein powder
1/3 cup almond meal flour
½ cup oat flour (or whole-wheat flour)
2 tablespoons cocoa powder (or cacao powder)
¼ cup xylitol (or sweetener of choice)
1 teaspoons baking powder
2 tablespoons white chocolate chips


1. Preheat oven to 350 degrees F and place 20 mini silicon cupcake liners on a sheet pan.

2. Whisk together egg whites, milk, and cashew butter in a mixing bowl until smooth.

3. Add protein powder, almond meal flour, oat flour, cocoa powder, xylitol, and baking powder to the mixing bowl and stir until smooth. Stir in white chocolate chips.

4. Evenly divide batter among the mini cupcake liners.

5. Bake in the oven for 13-16 minutes, or until center is cooked. Enjoy!

Makes 20 servings
