Sweet Potato Cinnamon Roll Protein Bread

I am certain that not much else reminds me of fall besides cinnamon & sweet potatoes. When I sit down to enjoy a plate of cooked sweet potatoes that have been seasoned with brown sugar and cinnamon, I transform into an instate state of comfort. As I decided to bake a loaf of sweet potato bread, I knew that cinnamon needed to be added in order to complete the recipe. I'm extremely happy with how this bread turned out - it's a moist, melt in your mouth, sweet, warm, flavorful recipe that is sure to send comfort waves all over you! 


½ cup whole wheat pastry flour
½ scoop vanilla protein powder
¼ cup coconut palm sugar
½ tsp. baking powder
1 tsp. cinnamon
1 large egg
¼ cup cooked sweet potato, mashed
3 Tbsp. plain greek yogurt
¼ cup coconut butter
2 Tbsp. unsweetened almond milk


1. Preheat oven to 350 degrees F. Spray a mini loaf pan with cooking spray and set aside.

2. In a mixing bowl, add egg, sweet potato, yogurt, coconut butter, and almond milk. Using a whisk or handheld mixer, blend and combine until mixture turns smooth. Add in the remainder of the ingredients and stir until well combined.

3. Pour batter into loaf pan, spread out and flatten with a spoon, and bake in the oven for 22-26 minutes, or until center is cooked through. Let it cool for 30 minutes then slice into 8 even pieces. Enjoy!

Nicolette’s Tips
* You may substitute whole wheat pastry flour with oat flour or regular whole wheat flour.
* You may substitute almond milk with milk of choice.
* For a lower sugar content, you may substitute coconut palm sugar with xylitol or stevia.
* For a standard sized loaf, double the recipe, use a regular sized loaf pan and increase the cook time by 10-15 minutes.
