Salted Caramel Stuffed Banana Cream Protein Cupcakes


¾ scoop vanilla protein powder
1/3 cup almond meal flour
2 Tbsp. whole wheat pastry flour (or oat flour)
2 Tbsp. granulated stevia
¼ tsp. baking powder
2 egg whites
½ small ripe banana, mashed
3 Tbsp. plain greek yogurt
1 Tbsp. unsweetened almond milk
1½ Tbsp. Torani sugar-free salted caramel syrup

Salted Caramel Filling
3 medjool dates, pitted
1 Tbsp. Torani sugar-free salted caramel syrup
1 Tbsp. sugar-free maple syrup
salt to taste

Salted Caramel Icing
¼ cup plain greek yogurt
¼ cup unsweetened almond milk
3 Tbsp. sugar-free white chocolate pudding mix
1 Tbsp. Torani sugar-free salted caramel syrup
1 Tbsp. granulated stevia


1. Preheat oven to 350 degrees. Place the first 5 cupcake ingredients in a large mixing bowl and sift together. Place the remainder of the cupcake ingredients in a small mixing bowl and whisk until smooth. Pour wet mixture into the bowl of dry mix. Using a hand held mixer, blend on low speed until batter is smooth and well combined.

2. Evenly distribute cupcake batter into 4 silicone cupcake liners (or use a cupcake baking pan sprayed with cooking spray). Bake in the oven for 16-18 minutes.

3. For the filling, place all the filling ingredients in a small stovetop pot over medium heat. Let mixture cook until dates become soft, stirring occasionally (it took mine about 12 minutes). Mash dates and stir together until mixture becomes thick. Remove from heat and let cool.

4. For the icing, place all icing ingredients in a small both and whisk together until thick and smooth.

5. To make the cupcakes, cut out & remove a small portion of the center from each cupcake. Spoon about 1 Tbsp. of the salted caramel filling inside the cupcake hole. Repeat this until all 4 cupcakes have filling. Then evenly distribute icing on top of each cupcake.
